Brown Stew Chicken Recipe

 

Ingredients you’ll need

1lb Chicken Wings/ 8-10 pieces Split wings

1 Tablespoon City Eats Chicken Seasoning

1 Tablespoon City Eats All Purpose Seasoning

1 Tablespoon brown sugar

1/4 Tri-colour Bell Peppers

1/4 White Onion

2 Stalks Green Onions

3 Sprigs Thyme

3 Cloves Garlic

1/4 Scotch Bonnet Pepper/ your choice (OPTIONAL)

2 Tablespoons olive oil

1 cup water

2 Tablespoon Ketchup

 

 

Step 1

Chop all your condiments, Onion, garlic, Green Onions, Bell Peppers, thyme combine in a bowl with City Eats Seasoning to rub and season your Chicken wings.

 

Step 2

Grease pot with Olive oil on low to medium heat and add in sugar to caramelize. Be careful not to make the oil too hot as this can burn the sugar and make it bitter then its not good. You also don’t want the heat too low as this will cause it to not caramelize or make the process slow and harden the sugar. You’ll know it’s ready when the sugar appears cloudy, a nice caramel colour and drains off a spoon fluidly. At the right temperature, you’ll notice this after about 3-5 minutes

 

Step 3

Add chicken wings to pot and increase the heat from low to medium so the chicken can absorb the Caramel colour; minutes on each side. Afterwards, cover the pot and let the chicken cook and make it’s own juices. At that point, you’ll turn the heat down a little so it can sweat for 7 minutes.

 

Step 5

Add 1 cup of hot water to the bowl that you seasoned the Chicken in to get all the marinade and pour it into the pot with the chicken wings, add the Ketchup and let cook for another 10-15 minutes until fork tender.
