Jamaican Chicken Soup Recipe

Ingredients you’ll need

2 lbs mixed parts Chicken

1 Acorn Squash/Pumpkin

3 large Carrots

1 Large Russet/Irish Potato

3 Corns

1/2 large White Onion

3 Stalks Green Onions

1 lb Jamaican yam OPTIONAL (feel free to substitute)

1 1/2 cup All Purpose flour (to make dumplings)

1/2 cup cornmeal (to make dumplings)

16 Cups water

3 tablespoons City Eats All Purpose Seasoning

2 tablespoons City Eats Chicken Seasoning

1 tablespoon Salt

1 whole Scotch Bonnet Pepper/ Habenero

4 sprigs of Thyme

4 Cloves of Garlic

 

Prep

-Chop Chicken into small 1 inch pieces and rinse in a bowl with Vinegar/Lemons to remove slime and gunk.

-Peel Acorn Squash to remove the outter layer and cut into small pieces

-Peel Carrots but do only cut them in thirds.

-Peel to remove the skin from the Potatoes and cut in half.

-Split corns in half

 

Step 1

Chop Chicken into small 1 inch pieces and rinse in a bowl with Vinegar/Lemons to remove slime and gunk.

 

Step 2

In a large pot, add Chicken, Acorn Squash/Pumpkin,Carrots, Garlic and White Onion and cook for 30 minutes.

 

Step 3 

After 30 minutes, remove the Squash/Pumpkin and Carrots and puree in a blender until smooth. Do not add water to the blender; the veggies should be tender enough to blend purely on its own. Pour the Puree back into the Pot with and mix it in to combine until the colour is yellow Orange. That is the colour you want your soup to be. Continue to cook.

 

Step 4

Peel the Yam at this point  and put it into the pot (only because if not handled carefully, the stain from the Yam can discolour it very fast; which you don’t want) along with the Potato and Corn and let cook for 15 minutes. In this time, you should be preparing your dough to make your dumplings.

 

Step 5

Prepare dumplings, (you could also do this in the prep stage). To make your dumplings, mix the flour, cornmeal and 1/4 teaspoon salt using 3/4 cup water to form a semi-tight dough. Stretch the dough and pinch off about 1/2 ounce of dough and roll it between the palms of your hands to form a softly tapered cylindrical shape. Repeat until all of the dough has been transformed into spinners dumplings. This is the easier way.

 

Step 6

Add the spinners to the pot, followed by the green Onions, Thyme and whole Scotch Bonnet Pepper. DO NOT cut/ burst the Pepper. 

 

Step 7

Add your City Eats All purpose & Chicken Seasonings. Now this step is up to your taste. Season to your taste and if needed add sale as the seasonings are very low in salt.

 

Step 8

Let cook for another 15 minutes and ENJOY!
