Jamaican Rice & Peas Recipe

Rice & Peas Recipe

Ingredient’s you’ll Need

2 cups of Jasmine/ your favourite Rice

1 cup Red Kidney Beans

3 cloves Garlic

2 tablespoons City Eats All Purpose Seasoning

1 540 ml can Coconut Milk

1 tablespoon fresh Ginger (minced)

7 cups of Water

3 sprigs of Thyme

1 stalk Scallion/Green Onions

2 tablespoons of Butter

 

 

Step 1

Rinse Peas and in a Pot, add with 6 cups of Water, 3 cloves of Garlic and boil on medium heat. After 50 minutes, most of the water will evaporate so add 1 more cup of water and cook for another 40 minutes.

 

Step 2

Add the Coconut milk and and let cook on medium for 10 minutes before adding in the Ginger, Butter, Scallions and Thyme followed by 2 tablespoons of the City Eats All Purpose Seasoning. Stir to combine and let cook for 10 minutes.

 

Step 3

Wash Rice in a bowl or under running water until the water from the Rice appears transparent to clean and add it to pot and stir in to combine with peas. Keep heat on medium.

 

Step 4

 

After 12 minutes on medium, all of the liquid should have evaporated. Remove Scallions/green Onions and Thyme. Cover the pot and turn heat to low and allow to steam for another 8-10 minutes. At that time fluff up Rice and Peas and ensure all the liquid has been evaporated for a fluffy pot of Rice & Peas.
